Bruno Nascimento, who is originally from Rio de Janeiro in Brazil is Cork ETB’s representative in the Dairy Chef competition to be held on the GMIT Campus on 6th April 2022. Bruno was selected as our representative after competing with other colleagues from the Commis Chef Apprenticeship programme for the honour.
The Dairy Chef competition is a joint French-Irish Initiative that focuses on Culinary Arts and Hospitality under the FICAHT agreement between the countries.
Bruno works in fine dining for the Fota Island Hotel and Spa in Cork. His employers have been hugely supportive of Bruno as an apprentice Chef and in developing his ideas for this competition; in particular, his Head Chef Cedric Bottarlini who will travel to Galway to support Bruno on the day of the competition.
Bruno has been enrolled as a Commis Chef apprentice since September 2021 and has excelled in all aspects of the course. The Level 6 Commis Chef apprenticeship programme is an intensive culinary training programme that prepares the modern chef for a career in the catering industry over two years. They attend the Westside Hospitality Centre on a part-time basis. Not only do the students cover a myriad of practical skills we teach them IT skills, nutrition and business, amongst other subjects. Graduates learn to design, cost and derive the nutritional content of a menu on an excel spreadsheet as competently as they can cook the menu. Westside Hospitality Centre takes great pride in the calibre of students the programme graduates.
Bruno is based in the Westside Hospitality centre which is a Satellite campus of the main Campus building in Bishopstown.
Bruno’s instructor and mentor for the competition, Justin Ryan, has over twenty years experience as a Chef and has worked as a catering instructor for ten years. He has completed degrees in MTU and TU Dublin and his experience includes Ballymaloe, Café Paradiso, the Cliff group, and Le Ecrivian.
